Vernaccia di Serrapetrona is the only sparkling wine produced with three fermentations.
The base wine undergoes its first alcoholic fermentation, then partially dried grapes are added for the second fermentation.
The third takes place in steel tanks using the Martinotti method, though traditionally it was done in the bottlle.
This wine is made from 100% Vernaccia Nera, with 50% of the grapes dried for two months.
In the glass, it forms a vibrant red foam, with an intense ruby red color and purplish highlights, complemented by fine and persistent perlage.
The nose offers intense aromas of ripe and crunchy fruits such as cherry, mulberry, and raspberry, alongside floral notes of cyclamen and violet, and a touch of spices like cinnamon and cloves.
On the palate, it is sweet but balanced by a bright freshness. The flavors mirror the aromas, enhanced by a slight salinity that adds balance and amplifies the bouquet. The texture is creamy, though not exceptionally refined, with good persistence and a pleasant finish.
Overall, this is a thoroughly enjoyable wine that tells a story of tradition and represents the richness and diversity of Italian winemaking heritage.
